The rather assertive nose combined toffee popcorn, fudge, raisins, prunes, pecan pie and blackstrap molasses with liquorice root, creosote, aniseed, brown sauce, old wood and compost. The palate encompassed over-done crackling, spiced sausage, smoked duck, treacle toffee, orange, chipotle chillies and coke clinker – sweet and savoury, with an industrial edge. In reduction, the nose suggested an immaculately kept engine room and the engineer’s lunch-box containing blackcurrant drink, cheese and onion sandwiches, orange, dates and maybe a toffee apple. The reduced palate had walnut whip sweetness – enough to carry the smoke and the industry. The distillery was officially founded in 1815.
