An unusual mixture of aromas greeted the Panel, we initially felt it resembled some kind of smoked bubble gum with tangy citrus acidity, natural tar, charred exotic fruit chunks, mouthwash and pink peppercorns. Then dried seaweed, wasabi and smoked dark beers. Reduction bought fruity pink pepper, rosewater, smoked teas, bergamot, dried exotic fruits in muesli, grilled shellfish, smoked rapeseed oil and toasted pumpkin seeds.
The palate was initially meaty with lots of smoked and charred red meats. Then cured game salami, beef jerky, burlap, cloves, five-spice and old school herbal cough medicines. Water gave us charred wood spices, hot brisket with chilli pepper, emulsion paint, clay, herbal ointment, menthol tobacco, curry powder and jasmine tea with liquorice.
