SUPPING SHERRY FROM POLISHED WOODEN CUPS

This one was very aromatic from the word go. We found redcurrants, dark chocolate, sultanas, dried mango, tobacco, leather and a sprinkling of black pepper. Warm, thick, rich and velvety smooth on the palate neat, it was like lamb loin with a dark chocolate port sauce – delicious!
After the addition of a drop of water we discovered a bowl full of roasted mixed nuts next to stewed apples, rosemary and thyme sausages, and maple syrup. To taste, we found a dark berry compote, hot vanilla sauce and a glass of lemberger, also known as blaufränkisch, wine. Following 11 years in an ex-bourbon hogshead, we transferred this whisky into a 1st fill ex-bodega Pedro Ximenez barrique.
