The immediate nose brings us peat and bonfires, while sweet sherry and nuts in syrup intrude in the background. Tasting it neat brings plenty of peat and bonfires, and we discover bonfire and sweetness in the finish. With water the nose becomes more peated and the sweetness takes a step back.Tasting with a few drops of water, the mouth is filled with smoke, and the aftertaste leaves us with pancakes and syrup.
After having spent a day in nature, we sit in the evening around the bonfire, enjoying a pleasant peated dram. We are baking pancakes on the fire and will be enjoying them with syrup and a sprinkle of nuts while night falls upon us. After five years in an ex-bourbon hogshead this was transferred to a second-fill Pedro Ximenez hogshead.
